COMO Cordeillan-Bages Opens in Bordeaux’s Médoc

A restored nineteenth-century château in Pauillac opens its doors as a luxury boutique hotel, bringing Michelin-star dining and exclusive wine country access to the heart of the Médoc

COMO Hotels and Resorts has officially opened COMO Cordeillan-Bages, a 28-room luxury boutique hotel in Pauillac, in the heart of the Médoc wine region of Bordeaux. Housed within a meticulously restored nineteenth-century manor house, the property marks the brand’s debut on Bordeaux’s Left Bank and was developed in close partnership with the Cazes family, proprietors of the legendary Château Lynch-Bages. For travellers seeking a wine country hotel in France that combines Michelin-star dining, immersive vineyard experiences and refined design, COMO Cordeillan-Bages sets a new benchmark.

The partnership between COMO and the Cazes family is built on shared values — savoir-faire, discretion, and a deep-seated passion for wine, gastronomy and exceptional hospitality. Set among rolling vineyards and historic châteaux that define some of Bordeaux’s most celebrated appellations, COMO Cordeillan-Bages joins COMO Le Montrachet in Burgundy as the group’s second French wine-destination property. For lovers of Bordeaux wine tourism, few addresses will offer a more authentic or privileged point of entry into the Médoc.

Michelin-Star Dining in the Médoc: Restaurant Le Cordeillan

The culinary heart of the hotel is Le Cordeillan, the signature restaurant operating under the creative vision of Chef Fabien Ferré — one of the most talked-about names in French fine dining today. In 2024, Ferré made history by becoming the youngest chef ever to receive three Michelin stars at a first inspection, for his restaurant La Table du Castellet in Provence. Bringing Michelin-star dining to the Médoc is no small statement, and Le Cordeillan delivers on every level.

Day-to-day kitchen operations are led by Executive Chef Mathieu Martin, a native of southwest France who translates Ferré’s philosophy into daily practice through direct relationships with local producers. The menu follows the rhythms of the Atlantic seasons: seafood and vegetables take centre stage — local fish, shellfish, and the agricultural richness of the Bordeaux countryside — while meat appears sparingly as a refined nod to regional tradition.

Guests can choose from tasting menus of three, four or six courses at both lunch and dinner, alongside a seasonal à la carte selection that refreshes every two to three months. Signature dishes include Atlantic turbot with asparagus, shellfish and lovage, and Gillardeau oyster with turnip, sorrel and radish.

“Opening Le Cordeillan is a rare opportunity to bring together everything I believe in,” says Ferré. “The richness of local produce, a wine list that truly speaks of the terroir, and the responsibility of breathing new life into a place with such a strong gastronomic identity.”

Bordeaux Wine List: Over 1,600 Labels in the Hotel Cellar

The wine programme is as ambitious as the kitchen. The hotel cellar houses over 1,600 labels — a comprehensive tribute to Bordeaux’s finest appellations, anchored by wines from Château Lynch-Bages and enriched by exceptional rarities including a 1961 Château Lafite Rothschild and a 2000 Montrachet Grand Cru. A dedicated sommelier team guides guests through curated pairings designed to complement each course, making every meal a lesson in Bordeaux wine culture.

Luxury Hotel Interiors in Bordeaux: Paola Navone’s Timeless Design

The interiors of COMO Cordeillan-Bages have been designed by celebrated Italian designer Paola Navone, who has reimagined the historic spaces with a contemporary sensibility and deep respect for the building’s architectural heritage. A sophisticated palette of greys, whites and metallic blues defines a quietly elegant atmosphere, while textured fabrics, bespoke furnishings and limewashed walls add warmth and character throughout.

The same refined aesthetic extends into Le Cordeillan restaurant: flooded with natural light, it pairs neutral tones with tactile finishes and features monochromatic ceramic centrepieces by artist Benoît Breymand — deliberately understated, keeping the spotlight firmly on the food. A terrace overlooking the Médoc vineyards, a Living Room and a Bar complete the guest experience.

Across the hotel’s 28 rooms and suites — including two signature COMO Suites — every material and detail evokes the understated elegance of the Bordeaux countryside, reinterpreted through COMO’s signature warmth and lasting appeal.

Wellness in the Vineyard: COMO Shambhala at Cordeillan-Bages

Guests looking for a wellness hotel in Bordeaux will find COMO Cordeillan-Bages equally compelling away from the dining table. The property embraces the acclaimed COMO Shambhala wellness philosophy, offering a heated 25-metre outdoor pool, a fully equipped fitness centre, sauna, and dedicated wellness amenities in every room — a rare combination in the French wine country hotel landscape.

Bordeaux Wine Tourism: Exclusive Experiences in the Médoc

COMO Cordeillan-Bages positions itself as a gateway to the very best of Médoc wine tourism. Through its exclusive partnership with Château Lynch-Bages, guests enjoy privileged access including complimentary daily group tastings and bespoke private visits on request. The hotel is also within easy reach of three of Bordeaux’s five Premiers Crus Classés — Château Lafite Rothschild, Château Latour and Château Mouton Rothschild — along the legendary Route des Châteaux, one of the world’s great wine routes.

For a deeper immersion into Bordeaux winemaking, the VINIV programme offers a personalised vinification experience across the region’s vineyard plots. Guided by the Cazes family’s technical directors, guests craft their own assemblage, aged in barrique at Bages, before designing custom labels and receiving the finished bottles — one of the most exclusive wine experiences available in France.

Beyond the vineyards, the Médoc rewards exploration: the village of Bages is just a short walk from the hotel, while Atlantic pine forests and beaches lie some 30 kilometres away.
